Slice red onion
Put slices in a colander, sitting in a larger bowl, then pour boiling water over them and let soak for about 1 to 1.5 minutes
1.5 Cups of hot water
1.5 Cups of White Vinegar
2 tablespoons kosher salt
2 tablespoons sugar
Then mix the above until everything dissolves
Notes:
Most important thing: sugar, the sweetness is the difference
- Add a little more sugar than salt think 1.1:1 or so
- 8oz jar holds about half a medium red onion and about half of the brine
